    Made this using beef shanks and then with stew meat that I think I cut too small (weren't selling short ribs except in the really thin Korean style). The beef shanks were amazingly good while the stew meat was a bit dry. That connective tissue and fat is absolutely necessary, and dang is it good. Thanks Chef!
